Pasta Lab carries simple lines of extra virgin olive oil (EVOO) and balsamic vinegar.  Our line includes four large-format oils from four different countries and their typical daily use oil.  We have a handful of flavored oils, too.  The balsamic vinegar collection is simply an every day vinegar, that thick 25 Star stuff, both dark and white, and a few flavors for salad dressings and glazes.  

Olive Oils


Italian Carolea- the Carolea olive trees grow in Basilicata and Calabria, A land between the heel and the toe of the “boot” in Southern Italy. They grow in the hilly area of Basilicata and nearby the Ionian Sea in Calabria. Native to this area, the olives product an excellent oil. A natural choice for grilled scallops, oven roasted cauliflower or baba ghanoush dip.

Flavor Profile: Medium intensity and fruitiness. Light aftertaste possessing a balanced pepper and bitterness with almond overtones. Aromatic notes of apple with artichokes.

Spanish Signature Blend EVOO- we think this cultivar is one of Spain's true treasures. Intense fruity flavor with a bold peppery kick and fresh herbal notes. Pair this robust olive oil up with seared or roasted meats, potatoes, will hold its own in strongly flavored dishes or as a finishing condiment. This unique taste of the picual olive will shine through, adding a sublime dimension to your creation.


California Varietal Blend EVOO: Tuscan- what do we love about this California grown Tuscan Varietal Blend?  Everything, and we think your customers will too.  An awesome varietal combination, each one adding different nuances and complexities to the final result.  Brush on roasted cauliflower steaks, add a splash to a robust Tuscan bean soup, or drizzle over your favorite crusty bread for a quick satisfying snack.  

Flavor Profile:  Exquisite olive varietal combination with great personality.  Structure is very fruity with hints of almonds, green apples and artichokes.  Medium to Robust intensity.


Greek Koroneiki- Koroneiki oils are noted for their fruitiness and their stability, which means that they keep their flavor and freshness a long time.  The Greeks themselves consume more olive oil than any other nation and with this olive oil, you can taste why.



Flavor Profile: Reminiscent of the olive tree’s wood, the greenness of its leaves, with soft herbal notes. Intense with the variety’s characteristic soft ending and touch of sweetness.


Fuses and Flavors


Basil is one of the most popular infused oils we have and with good reason- all things loved best about summer are concentrated in its aroma.  So aromatic, you'll think you are smelling a freshly picked leaf from the garden.  You'll be convinced you are when you taste it!  Clean, crisp recognizable purity that usually only nature can bring to the table.  


Rosemary, in it's full flavor and aroma, gently infused in a quality olive oil. Does it get any better than this?  Rosemary is a symbol of remembrance, love, loyalty and friendship.  Serve this up to your friends next movie binge night over popcorn and you'll be the receiver of all of these.  Drizzle over flat bread, butternut squash, roast meats and seafood for that little something special.


Meyer Lemon Naturally flavored extra virgin olive oil that features the refreshing, honest taste of real lemon. This light, aromatic olive oil is perfect for the Spring and Summer. The perfect way to spruce up a summer salad or as a surprising bread dip!

 Balsamic Vinegars

Balsamic Vinegar of Modena- 8 Star- our  Balsamic Vinegar of Modena Italy is made from a process dating back to the middle ages.  It is a superior balsamic vinegar with a rich brown color and a slightly woody bouquet. The flavor has a complimentary sweet/tart combination that makes it perfect for everyday use.  Serve it with pieces of parmagianno reggiano and taleggio cheeses, a favorite local dish in Modena. Great for salad dressings, marinades, and sauces.


Balsamic Vinegar of Modena- 25 Star Dark-  our unique 25 Star Balsamic Vinegar of Modena Italy is made using time honored traditions.  The process begins with careful selection of the Lambrusco and Trebbiano grapes. The grapes are pressed, and the resulting juice called “must” is heated in copper cauldrons until the volume is reduced through evaporation to about% of the original weight.  The liquid is then decanted into wooden barrels and left to transform into this beautiful rich dense balsamic vinegar. Get ready to savor an affordable indulgence!


Our Balsamic Vinegar of Modena- 25 Star White- this artisan 25 Star White Balsamic Vinegar of Modena Italy is made using time honored traditions, same as the dark balsamic.  The process begins with careful selection of the Lambrusco and Trebbiano grapes. After the grapes are pressed the “must” is boiled in a contained low-pressure environment, keeping sugars in the grape juice from caramelizing and turning color. The liquid is then decanted into wooden barrels and left to transform into this beautiful rich dense white balsamic vinegar. Always a refreshing and delicious taste adventure for all your favorite dishes.
